Vegan gingerbread cookies

Merry Christmas!


I hope you are enjoying the prep for the holidays.


Today I brought a recipe for you which is simple, yet delicious, can also be made with kids - there are no eggs in them or any other ingredients, which could be harmful if they eat a little bit of the raw dought. Fun to mix, roll out, cut out shapes or decorate. It is easy to make and fast. Hope it will bring you joy.



Ingredients:

1/2 cup vegan butter

1/2 cup brown sugar

2 cups all-purpose flour

3 tsp gingerbread spice mix

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 cup molasses or agave

1/4 cup plant-based milk


Icing

1 cup powdered sugar

1 tbsp non-dairy milk or water



My mum's cookies :)


Mix the dry ingredients in a bowl. With a hand mixer combine the wet ingredients, then add them to the dry. Mix them together well, no need to knead it like a bread dough.

Chill the dough in the fridge for 15 minutes, then roll it out.


Preheat the oven to 180°C/350°F. Cut out the cookies and bake for 10 minutes. Keep an eye on them because every oven is different.


Mix the ingredients for the icing. Decorate when the cookies are completely cooled. Let your fantasy run free :)
