Hi lovelies,
Hands up if you love chocolate! Hands up if you love fudge brownies! Yay this one is the most satisfying, rich chocolaty goodness ever and so easy to make. Takes no time to whip it up and enjoy it, absolutely a crowd pleaser.
AND it has a healthy twist in it that you (or your kids, or hubby) won't even notice! The secret ingredient is...... drumroll please: zucchini! Yes you've heard it right. You can eat your daily greens hidden without tasting them.
So lets see the recipe for the best vegan brownie:
140 grams (1 cup) flour
30 grams cocoa powder (about 1/4 cup)
120 grams (3/4 cup) coconut sugar or brown sugar
60 ml oil (1/4 cup)
100 grams (1/4 cup) dark chocolate
240 ml (1 cup) almond milk, or plant milk of your choice
200 grams (1,5 cups) grated zucchini (courgette)
30 grams (1 scoop) vanilla vegan protein powder (optional)
big pinch of salt
For toppings anything you like, I used:
30 grams dark chocolate
a handful of almonds chopped
a handful of coconut chips
2 tbsp peanut butter (unsalted, natural pb)
big pinch of salt
Slowly heat the oil in a pan with the 100 grams dark chocolate and melt together (really slow, don't burn it).
Grate the zucchini and add it to your mixing bowl (no need to drain it).
Put all ingredients in a bowl and mix them well together with a spoon or spatula until there are no lumps. Pour it in a 9x12 inch (approx. 25*30 cm) baking dish and even it out. Don't worry if it is a bit runny. Add the peanut butter on top and swirl it in a bit to distribute it evenly. Add a big pinch of salt, then top it with the chopped almonds, chocolate and coconut flakes.
Put it in the oven for 30 minutes to 180 Celsius or 350 Fahrenheit degrees. If you like it more cakey than you can add 5 more minutes, but in 30 minutes it shall be perfectly baked and a bit fudgy on the inside.
Let it cool down (that's the hard part to be honest) and cut it into squares.
I served mine with cantaloupe ice cream. That's an easy one too:
200 grams cantaloupe
1/2 can coconut milk
Blend them together, and pour it in a box. Place it in the freezer and stir it every 2 hours until it's creamy and dreamy. If you freeze it overnight and not stirring it, then I recommend to break it in pieces (or freeze it in ice cub trays) and blend it the next day again to get the creamy texture.
