Taco lettuce wraps with lentil cream

Hi Lovelies,


Today's recipe is a healthier option to regular tacos, also lower in carbs so you can fit in the keto category. As I'm trying to go to the shops less often, I'm always digging out foods from the pantry, which has been there since a thousand years. Sometimes I get hyped by a recipe online and buy ingredients, which I never use again, because takes time and I'm lazy to prepare it, so now I found dried red lentils, halved peas, chickpeas, black rice, and decided to make dishes with these ingredients.

As you can see I started with the lentils. If you don't want to soak them overnight, there is quick fix: Add them to a pan with twice the amount of water and bring it to a boil. Let it simmer for a minute, than cover and turn off the heat. Let it soak for an hour, than cook them for another hour. Now you can use them, or if you have canned ones, than you are much luckier.

From these lentils I made some lentil patties for a meal, but still had leftovers. So lets make something new with it. Also it is wild garlic season so I put wild garlic in/on everything.



Ingredients:

cooked lentils

vegan mayo

salt, pepper

wild garlic (chopped up into small pieces) / garlic powder

1/4 yellow onion

1/2 tsp cumin


Mash the lentils with a fork, and add all the rest of the ingredients. Mix it well. wash some lettuce leaves and pat them dry. Chop up any veggies you like and add them to the lettuce cups. Load it up with the lentil cream, garnish with seeds (and more wild garlic), and hot sauce if you like. Enjoy!
