Stuffed apples with toffee and chocolate sauce

Apple season is heeeereee.


What's better than picking apples and make some fall goodies out of them? Fun in the sun and some exercise at once. They are tasty and juicy, freshly from the trees, ah nothing can beat that. I always try to cook with seasonal food items, and if possible than local too. So go get yourself up of your couch and let's get hunting those babies down.


I love apples as they are, but they make my stomach a bit acidy, so I like to cook, steam or bake them a bit. In this next recipe, we will stuff them with all the goodness and put them in the oven to sweat it out and get nice and golden. You can use any type of apples for this.



Ingredients:

apples (if you can find bigger ones it will be easier to stuff them)

1/2 cup oats

1 tsp agave

a handful of walnuts cut into small pieces

blueberries

raisins, if you like

spices: cinnamon, cardamom, cloves, nutmeg, or just use a gingerbread or pumpkin spice mix


For the sauces:

dark chocolate + cinnamon + a pinch of salt

toffee sauce: 2 tbsp sugar (I used coconut sugar but any kind will do) and canned coconut milk


Start by chopping the top part off the apples. Carefully scoop out the inside of the apples, leaving some thickness on the sides.

Mix the oats with the agave, walnuts, spices, blueberries and raisins, and fill the apples generously.

Line a baking sheet with parchment paper and put the apples in. Place the tops on them, and bake them in the preheated oven for about 20 minutes on 200 Celsius degrees (400 Farenheit). Keep an eye on them not to burn.

For the sauces just melt the dark chocolate in the microwave or in a pot carefully and add in the cinnamon and salt.

For the toffee pour the sugar in a pot and start heating it on low. Wait until it all dissolves and starts to turn into golden brown. You can stop here if you like a sticky toffee but it will harden up as it cools. I usually add 2 tbsp of the canned coconut milk hard part and keep simmering it until the sugar fully melts in it, and water starts to evaporate. It will darken a bit in colour and get more dense.


Take your apples out of the oven, let them cool a bit. Take off the "hats" and pour on your sauces with a spoon. Put back the tops, and if you want to make them a little sweeter you can sprinkle with powdered sugar.
