Today I borught to you a simple yet decadent cake which I made for a birthday. I wanted something simply, and let's be honest, who wants to turn on the oven when warm weather comes in?
So I found a recipe online and modified it for simplicity and more flavour, hope you'll like it.
Ingredients: (for 18 cm cake pan)
For the crust:
360 gr any kind of vegan cookies (you can use gluten free, sugar free too)
50 gr vegan butter - melted
sweetener of your choice if the cookies are sugar free
Blend the cookies into a powder form, or if you don't have a blender, or stressed that you have to cook, than put them in a bag and hit them with a rolling pin until they break into small pieces.
Melt the butter and add it to the cookie powder, mix and pour it in the baking tin. For it with a spoon or by hand to get the desired shape, try to make a rim for it which will hold the cream.
If you see that the mixture is dry and doesn't stick well you can still add some melted butter, but it will stick together in the fridge. Put it in the fridge to solidify until you make the cream
For the cream:
1 can full fat coconut milk
1 bar of dark chocolate (90-100gr)
1 dl (3/4 cup) hazelnut milk, or any plant based milk
4 tbsp corn starch
sweetener of your choice
Mix the plant milk and the corn starch while the milk is still cold or room temperature. Than start heating up the canned coconut milk with the chocolate, until it dissolves well. Add the starch mixture, sweetener, you can add vanilla extract or any flavour you like, I also hid a tbsp of hazelnut vegan protein powder in it, and let it bubble up. Turn it to a low heat and stir continuously for around 8-10 minutes, till it thickens up. Pour the mixture into the base of the cake and put it in the fridge for at least 3-4 hours, or overnight to set. You can add any toppings, I just used berries, as the sour balances out the sweet chocolate, and some mint leaves for extra flavour.
