Pumpkin it up baby

When the pumpkin season hits, I just can't contain myself and need to have it in all the variations. My favourite way to eat pumpkin is spicy and salty, but of course there are some sweet versions too which I have to make.

Let's start with breakfast:


When the weather is gloomy it is so heart-warming to have a nice bowl of oatmeal in the morning. Grate in your raw pumpkin, add your favourite spices (cinnamon, nutmeg, cloves for me), apple slices, raisins. Enjoy.


For lunch I thought a soup would make a good starter:


Topped this one with grilled cauliflower florets to make it a more hearty meal. You can eat it on its own too. I added onions, garlic, half of an orange, pumpkin, cayenne and some vegetable broth. Vegan joghurt for topping and some pumpkin seeds, grilled red onions and pumpkin seed oil.


And of course there's no pumpkin week/month without good old mac'n cheeze.

Kept it simple: steamed the pumpkin with some garlic and onion, put it in the blender with smoked tofu, cashews, chilli, a dash of almond milk, salt, nutritional yeast and pumpkin seed oil. Mix it, add it to your pasta, sneak in some veggies (baby spinach and sundried tomatoes) top it with vegan parm (nooch and cashews blended) and enjoy.


And than an easy meal for dinner, a beautiful vegan ratatouille, layers of goodness baked together.


Ratatouille with butternut squash, zucchini and red onions. It can be a side dish or eat it as it is. Added some vegan butter, rosemary, thyme, salt and garlic. Born and raised (baked) in a cake pan.
