Layer upon layer

I was always a big fan of one pot meals. And this one is absolute a life saver.

Only requires one dish, so no washing up.

Can make a big batch for more days or freeze it for later, and just pop it out when you're lack of time and need lunch or dinner.

Healthy and delicious.


So what's not to love about it?

The main ingredient is: what you find in the fridge.







Suggested ingredients:

onion

garlic

some kind of potatoes - now I used sweet potatoes (2 large, cut into rounds)

vegetables: broccoli, peppers, cauliflower, cabbage, zucchini, eggplant, etc

grains: quinoa, rice, couscous

spices: salt, pepper, cayenne, cumin

sauce: vegan sour cream, or you can use tomato sauce, garlic sauce

toppings: vegan cheese, smoked tofu cut into small cubes









Chop up everything in even pieces, cut the potatoes in round slices. Add some oil (or water) to the bottom of your baking dish. Layer the potato slices, add the onions, garlic, veggies, cooked grains, top it with your sauce, add the cheese and tofu and put it in the oven for 25 minutes on high heat.

Let it cool, slice and enjoy. You can store it in the fridge up to 5 days, or in the freezer for 6 month.
