Green pancakes?



Today I made some crazy green foods and I didn't regret trying something new again. Pancakes or crepes however we call them, are a staple in most kitchen. There are endless variations on the batter, so you can chose to your preference.

When I saw Jamie Oliver making green pancakes I knew I have to try to make it...of course with some twists, or it wouldn't be me. So let's figure out how to veganize it and maybe make it glutenfree? Why not, but keep it simple as always :)








Ingredients (about 8 smaller crepes):

1cup oats

1 cup spinach

1 cup water

a pinch of salt

1 tsp baking powder

1 scoop rice protein (optional, no flavour, just for more protein intake)

toppings you like


Sooo put all ingredients in a blender and mix. Then let it sit for 5 minutes and bake them in a nontick pan on medium-low heat, be patient. I used an electric crepe maker which helps with the process a lot.

Don't worry about the amount of spinach, it will give your crepes a nice vibrant colour but you won't taste them, so it's kid-frienly. They will be amazed by it for sure, as you can call them superhero pancakes or Hulk crepes :)




As I made 8 of these, wanted to try a sweet and a savoury version too.

For the sweet sauteed some apples with frozen berries, added in agave, cinnamon, nutmeg and raisins, and some mint for a nice twist.

For the savoury I fried up in a pan some red onions, mushrooms, artichoke hearts, dried tomatoes with chilli flakes, soy sauce and some turmeric. Added in some more spinach and basil when assembling them, you can add some vegan cheese too if you have it on hand.
