Gingerbread-berry yogurt bowl

Hi lovelies,


Hope Christmas went well and you are all grateful for the family gatherings. I bet there are some festive foods leftover, just like gingerbread.


To reuse them in a fancy way today we are making gingerbread-berry yogurt bowl, or cups. You can prep it for yourself or make it for New Years Eve in a fancier way.




Ingredients (4 cups)

400 ml almond yogurt

4 tsp ground chia seeds or 3 tsp agar agar

Chrushed gingerbread cookies

vanilla extract

optional: vegan protein powder


200 gr berries (I used frozen)

cinnamon

2 tsp coconut sugar (or sweetener of choice)

mint leaves


For the yoghurt layer mix the ingredients together. If you are using agar agar than heat it up gently, and add the cookie crumble when it's a bit cooled down.

For the fancy cup version fix your cups in a tilted way and add the yogurt mixture. let it harden in the fridge for at least an hour. Try to move one cup when you think it is fixed.



For the berries put all ingredients (save some mint leaves for decoration) in a pot and let it heat gently, than simmer on low until the juice evaporates. Take out the half of the fruits in a bowl, and mash the other half. Let all cool down completely. Add the mashed berries to the cup and top it with the whole fuits. Garnish with mint leaves and serve.
