Colorful birthday cake (no bake)

Hi Lovelies,


First of all happy birthday for my Mum.❤️

I wanted to make her day special with this multi-layer no bake cake. Hope you will try to prep this too for your loved ones.


This cake ha so many layers, but easy to make:

- coconut oat cookie layer

- marzipan

- blueberry-almond yogurt

- vanilla chia pudding

- pesimmon-almond yogurt

Topped with fruits and homemade marzipan roses.


So lets see!

It is important to mention, to make the layers after each other. When one is ready, place it in the fridge to harder, and than make the next layer, put on top and let it harden again. That seems to make it a bit time consuming, but believe me it doesn't take that long, and worth the time.



Base: coconut oat cookie layer

2 cups cookie crumbs

1/2 cup melted vegan butter

If you are lucky to find a coconut-oat cookie than use that, if not, just use oat cookies and shredded coconut. Put them in a bag and smash them with a rolling pin to get out any stress. Of course you can use a food processor too, but where's the fun in that? Melt your vegan butter and start adding it to your crumbs. Stir it well every time you add a little and see if you can press it together. If yes, than pour it in a form and press with your hands or with the bottom of a glass.


Layer 2: a layer of rolled out marzipan, this is really optional, I just wanted to hide that inside.


Layer 3: blueberry-almond yogurt layer

1/2 cup blueberries

2 tsp coconut sugar

1 tbsp chia seed grounded

1 tsp agar agar

200 g vegan yogurt (I used almond for that, but any kind will make, you can use vanilla flavour to add sweetness)

vanilla extract (optional)


Add the berries to a pot and gently heat them, after softened smash them with a fork and add the sugar.When it dissolved add the chia and the agar agar and stir together. Mix in with the yogurt and vanilla extract.


Layer 4: chia pudding

150 ml vegan yogurt

3 tbsp chia seeds

2 tsp coconut sugar

Mix them together, pour on top of blueberry layer and let firm up (at least an hour). If you are not confident it will harden you can add agar agar to this one too, but than you have to heat the mixture gently.


Layer 5: persimmon-yogurt

Same as the blueberry layer just use persimmons instead. I blended them a bit after softening, so it would mix better.



Top your cake with the fruits you used and ready. This was my first time making marzipan roses and I can tell you it is quite fun and quick to make.
