Christmas "wellington"

Hi Lovelies,


Merry Christmas to all of you. Hands up if you like this time of the year. I'm totally with you, love the Xmas spirit and of course the foods.

This stuffed pastry is simple yet delicious with many layers and many flavours in it. Easy and quick to make it and everyone liked it so far.


Ingredients (for 2 small or 1 bigger):

Vegan puff pastry 1 roll


1 cup pumpkin puree

1/2 sauteed onion

salt, cayenne, rosemary


2 handful of spinach leaves


1 cup lentils (I used canned)

1/2 cup roasted sunflower seeds (walnut, almond would also be okay)

2 cups of chopped mushrooms

1/2 sauteed onion

1 tbsp mustard

2 tbsp nutritional yeast

salt, thyme, rosemary



First I prepped the pumpkin puree but if you have canned one you can use that too.

Roll out the puff pastry. I cut that in half because made 2 smaller ones but you can leave in whole too.


Layer the pumpkin puree on one side of the pastry, then add a handful of baby spinach on top, and cover with the lentil-mushroom mix. Shape it with your hands and fold over the other part of the pastry. Fold in the edges and press it down with a fork.


Cut some holes on the top, you can decorate it too (I was way too lazy, oops).

Put them in the oven on 180°C for around 15 minutes but keep an eye on it.

I served mine with potato mash mixed with green peas and a simple vegan gravy.



Vegan gravy

1 cup vegetable stock

1,5 tbsp flour

1 tsp mustard

2 tbsp nutritional yeast

Garlic powder (optional)

Chopped onion sauteed

1 tsp soy sauce if you want the brown color


Add all ingredients in a pot and stir above low heat until thickens.


If you make the potato mash and gravy while the wellington bakes you can be ready in 30 minutes with the whole lunch/dinner. Bon Appetit.
