First of all Happy New Year.
This cheesy cauliflower soup will help to start your year on a good note trying something comforting, yet vegan, low carb, gluten free and fully delicious.
Ingredients (per serving):
150 gr frozen or raw cauliflower
150 ml veggie stock
1/2 onion
1 clove garlic
1/2 tsp grounded cumin
2 tbsp nutritional yeast
2 tbsp vegan yoghurt (optional)
Cayenne or jalapeño slices if you like it spicy
For the kale chips just tear some leaves of kale apart, spread them on a baking sheet with no overlapping and bake them for about 10 minutes or until crispy on low heat. Make sure to keep an eye on them, because they tend to burn real quick! Curly kale is the best choice, but here it is hard to find, so I used normal kale which is also fine just bakes faster.
Add the kale chips to your soup or put them in a small bowl with some spices of choise and enjoy the creamy soup with the crunchy texture.
