Cheeky choc-cherry "salad" bar

Can't believe May has just gone by, and also "Salad Month Challenge" is over!

If you haven't followed it on Instagram, then feel free to check it out here. Hope you got a lots of new inspiration by now and find salads a bit more interesting food option than before. I love how versitale the ingredients can be, and also it turned out, that it can be a smoothie, sandwich, soup, sushi or even a dessert.


You can be like, What Dora? Dessert?



Yes, exactly. this following recipe will be made of veggies and still don't taste any green.


Ingredients (for 2 bars):

base layer:

100 g sweet potatoes steamed

5 g cacao powder (sugarfree)

vanilla extract

cinnamon

pinch of salt


top layer

1/2 medium avocado

20 g baby spinach

100 g full fat coconut milk (canned)

liquid stevia (or sweetener of choice)

38 g dark chocolate melted

sour cherries

gingerbread spice mix

optional extras: granulated coffee, mint leaves, vanilla, use your imagination :)




For the base layer mash the sweet potatoes with a fork, then add the rest of the ingredients and mix well. Put it in a cake mould or any small container and press down until even. Store it in the fridge until you prep top layer.



For the top layer blend the avocado, spinach, coconut milk, sweetener and spices, than melt the dark chocolate and mix that in there too. Put your sour cherries on the bottom layer and pour the mixture on top. Let it harden in the fridge for a few hours or overnight. Decorate with cacao powder.
