Broccoli-basil heaven

Are you in a festive mood already?

Maybe you are like me and ate a ton of chocolate and sweets before even holidays begin?

If you're craving something healthy, than here's a quick healthy and tasty broccoli cream soup, ready in 5 minutes, looking fresh, filling up your veggie-meter.


Ingredients (for 2):

400 gr broccoli

0,5 cup vegetable broth

1 onion

2 cloves garlic

4 tbsp vegan sour cream or cooking cream (usually it's almond cream)

salt, pepper, basil


Sautee the diced onion on a tbsp of veggie oil until translucent, after some minutes add the smashed garlic and let it cook for 30 seconds. Add the broccoli florets and the veggie broth, cover it and let it steam for 2 minutes. Add everything in a blender with the spices and cream, and blend it up.


For the cheese crisps grate some vegan cheese and add in small heaps to a non-stick pan. Be patient with it and let it melt, than get a bit golden on one side. When you see at the edges that it is turning color, than flip carefully and let the other side crisp up too.
