Baked oatmeal for autumn

Recently I started to use my frozen pumpkins for some dishes, and it's fun that you can hide extra veggies even in your sweet dishes.


Usually we don't eat that much greens (if any) with our breakfast, so here's a tip for an extra take in. And the best part noone will know it.

As oatmeal is a staple brekkie for many

people, it can get boring over time. But it doesn't have to be that way. You can add so many flavors with spices, and also vary the texture with different cooking techniques.


Overnight oats soak up the moisture you add to it, and get a bit more dense. If you cook your oats fresh in the morning, they will have a rich, creamy texture.

But if you'd like a real dessert for the start of the days, just bake them in the oven with fruits. It is warm, filling, delicious and looks amd tastes like a cake.


Who wouldn't love that? I sure do!


Today I'm also going to hide some pumpkin in it, so this will be a no banana recipe.

Ingredients:

Apples, pears, plums or any fruit you like

Raisins

Walnuts or any other nut

1 cup of rolled oats

1 1/2 cup of diced pumpkin

1 tbsp chia seeds (optional)

1 tbsp flax seeds grounded (optional)

1/2 cup plant based milk

2 tbsp agave syrup or sweetener of choice

Nut butter

Pinch of salt

1 tsp gingerbread spice mix

1 scoop of vegan protein - optional if you want to add flavour, I used salted charamel (Allnutrition protein powder)

Dice up your fruits and add them to the baking dish. Add some raisins and walnuts too.

Cook your diced pumpkins for about 5 minutes to get them soft. Drain them and add into the blender with the sweetener and gingerbread spices.

Add the oats, chia and flax seeds, and the protein powder into a bowl, and pour the pumpkin blend on it. Mix it well until there are no dry ingredients, if too dry than add a splash ot milk or water to it.

Blob it on the top of the apples and smooth it out in an even layer.

Heat up some peanut butter, or if you are using pb powder as I did than make it a bit runny, add a pinch of salt and a little more gingerbread spice to it, than drizzle on top. I also added some extra blueberries, you can add dark chocolate or anything you'd like to. Put some walnuts on there too they eill get nice and toasted in the oven.


Bake it on 170°C/340°F for 20 minutes and ready.
