Babka

Hi Lovelies,

Here we are at the finishline for Christmas, time for cooking and baking, and prepping our hearts for celebration.

Even if I'm not in festive spirit, some cinnamon and chocolate scent can bring out the feelings.

Today I brought you an easy yet so beautiful dessert: the babka. Take some time to make it, but you will love it. It can be served as a the decoration of the Christmas table, or you can wrap it pretty and gift it to someone.

Don't be scared of the complicated looking pattern, it's really simple to prep.

Ingredients (for one big or two smaller ones):

250 g flour

0.5 packate instant yeast

150 ml plant based milk

35 g (coconut) sugar

25g vegan butter

1 tsp cinnamon

A pinch of salt

Warm up the milk slightly and add the sugar and yeast. Let it sit until foamy (approx 10 min) than add to the rest of the ingredients. Mix and knead the dough, than take a bit of oil in your hands and cover the dough with it. Cover the bowl with a table cloth and let the dough proof for at least 30 minutes.

Filling 1:

30g vegan butter

Cacao powder

Coconut sugar

Chocolate chips

Cinnamon (optional)

Filling 2:

Orange jam (you can choose any flavor you like)

Dried candied fruit (I used orange and lime peels)

Chopped walnuts

After it doubled put it on a slightly floured surface (if you are making two smaller ones like me, than measure and half). Roll it out to a rectangular shape and add the filling. Roll it from the longer side, than cut lengthwise in half. Braid the two halves together and put it on a greased baking tray. For the ring and pinch the ends together. Let it proof again until doubles than bake it till 25 minutes on 180 Celsius degrees (or until top is brown).

If you make it and post a picture of it don't forget to tag me so I can see your creations. If you have any idea what to add, than I'd be happy to hear it.
