Hi Lovelies,
Today's recipe is a breakfast muffin, which can also be eaten on a vegan lifestyle if you are following a ketogenic diet.
If you don't know what keto is: it is a high fat, low carb, moderate protein diet, where your body is using fats as energy. it is good for some health issues and for weight loss also, but it is very strict ( 30 g net carbs a day is really low). It is a bit hard to follow if you are vegan, and I don't like to resptrict myself that much, as eating almost no fruits is a no-no for me. But for some days it is good to have less carbs, I feel less heavy, and it helps with bloating too.
So let's jump in and bake some yummy food.
Ingredients:
25 g rolled oats blended into flour
30 g coconut oil
90g coconut flour
20 g poppy seeds
4 g baking powder
stevia (or your choice of sweetener)
vanilla extract (optional)
3 tbsp chia seed mixed with 6 tbsp warm water
juice and zest of 1 lemon
40 ml coconut milk (canned, full fat part)
Mix the chia seeds with the warm water first and let it sit for some minutes. This will be our egg replacer. Mix together the oat flour, coconut flour, poppy seeds and baking powder, than add the rest of the ingredients. You can let the mixture set for 10 minutes if you find it too liquidy.
Than put the mixture in muffin tins, in my mould I got 8 muffins out of this mixture quantity. Bake them on 180C for 15 minutes, than let them cool down.
You can add on top more coconut milk whipped up, berries, vegan cream cheese, it is up to you how to decorate.
Macros for 1 muffin:
7,7 g carbs / 5,3 g net carbs
13,9 g fat
2,9 g protein
