Pumpkin spice banana bread

Hi Lovelies,


As we are going more and more into fall I like to make more hearty foods for chilly weather. Today I brought you a pumpkin spice banana bread, which is so easy to make, it only takes minutes to mix, than it goes in the oven and you just have to wait till its baked. Plus your house is going to smell like fall, because of the spices in this one.

You can eat it as a breakfast or dessert, cold or warm, topped with your favourite fruits or nut butter.


Ingredients:

2 large bananas

2 tbsp chia seed mixed with warm water

4 tbsp pumpkin purée

60 g oatmeal

30 g coconut flour

20 g poppy seeds

40 g vegan protein powder

cinnamon

½ tsp baking soda

juice of half lemon

rum flavour

sweetener of your choice

Smash the bananas in a bowl, add the chia eggs and the pumpkin purée. Mix well, than add the rest of the ingredients and stir until no lumps are formed in the batter. Pour the mixture in a loaf pan and put it in the oven to 170C (340 F) for about half an hour. You can also decorate the top with walnuts, than put an aluminium foil on top after 15 minutes, so it won’t get burnt. After 30 minutes passed check with a knife or needle if the inside is properly baked through.


Top it with vegan butter, cinnamon, fruits and drizzle with agave syrup, or smear peanut butter or almond butter and put some more banana on top.
