As we are over the middle of August, fall seems to come closer and closer. The holidays are over, and it is time to go back to school or work. I agree that it is not always fun, but it can bring new possibilities.
To make it a little more simple and easy I brought you 3 bento box ideas, which can be made in 15 minutes. How does it sound? You can also make the foods in bigger portions for meal prep and eat through the week or freeze them.
1. Mac’n cheese bento
Sauté cauliflower florets in some water. Meanwhile in a blender mix
100g smoked tofu
5 tbsp sesame seeds
5 tbsp coconut milk
5 tbsp nutritional yeast
salt, pepper, garlic powder, ground cumin
Adjust the amount of coconut milk to get the creamy consistency. After 6-8 minutes when the cauliflower is fork tender strain it and add the cheese sauce. Add any toppings you like: cherry tomatoes, olives or coconut bacon.
Make a side salad to get the greens in, on the other side pack watermelon with mint as dessert.
2. Ratatouille bento
Dice up onions and garlic, and fry sauté them in a pan with a tablespoon of olive oil. When they are translucent add chopped up peppers and tomatoes. Put a lid on it for 5 minutes. Than add zucchini, eggplant and cubed tofu. After another 5 minutes turn off the heat and stir in half a cup of couscous. Put the lid back on and let it sit.
For snack add carrot or cucumber sticks with hummus. For dessert pack grapes
3. Sandwich bento
Toast 2 slices of bread per sandwich. Let them cool down before preparing the sandwich. Optionally spread vegan butter or cream cheese on it. Than add a quarter of and avocado er sandwich and smash it. Put salt and pepper on top, and top it with the other slice of bread.
On the side add salad with tomatoes and cucumbers, this way the veggies won’t make your sandwich soggy. For snack pack peanuts into a small container.
