Keto vegan recipes

How is summer going? Hope you have a pretty good time.

If you read my last blog, you know I'm in trying keto diet and intermittent fasting now. If you missed it than you can check it out here. I'm enjoying this lifestyle so far, but needed to figure out what I can eat and how much at the beginning. I've collected some recipes, which can be used in keto, low carb high fat, keeps you full and satisfied, and you can eat a lot of it. Last but not least they are are really tasty :) Hope you will prepare and enjoy them too. Let's jump in. the measurements are per serving.


1. Breakfast blueberry parfait

100ml full fat coconut milk 45 g blueberries 20 g protein powder (vanilla) 10 g chia seeds 10 ml coconut oil 1 tsp lemon juice

Blend them up (just save some berries for topping) and let it chill in the fridge overnight (or drink it as a smoothie if you can't wait)

Fat: 34 g fat, net carbs: 6 g, protein: 20 g


2. Layered cabbage

90 g cabbage (kale, but the round one)

80 g cauliflower

15 g onion

11 g Knorr bolognese base (you can use tomato paste instead with Italian seasoning)

62,5 g Cremesse vegan sour cream

5 g nutritional yeast

1 tsp smoked paprika

1 tbsp oil

Put the cauliflower and the cabbage leaves in salty water for 5 minutes to soften. Than cut the cauliflower into small pieces (ground meat texture), sauté onion on in a pan with the oil, add the cauliflower, some water and the bolognese base. Stir until all combined and thickened. Place half of the cabbage leaves into a baking pan. Thank layer on the cauliflower mixture, top it with the rest of the leaves. Than mix the vegan sour cream with the nutritional yeast and smoked paprika. Pour on top. Put it in an oven on medium heat for 30 minutes.

Fat: 19 g, net carbs: 9 g, protein: 10 g


3. Keto chocolate

10 g coconut oil

12 ml coconut milk

3 g cacao powder (unsweetened)

stewia per taste

I usually make 5 serving at once this makes a whole chocolate, but cut it in 5 pieces. Mix all ingredients and put it in the fridge in a shallow rectangular box to set.

Fat: 13 g, net carb: 0 g, protein: 1 g
