Summer is totally here, sun is shining, and weather is hot. It is definitely time for a grill party! People usually think of meat when BBQ comes in mind, but honestly you can grill up so many foods.
Almost every veggies can handle some grill marks, not to mention fruits. Yep, fruits are also really versatile in this form.
For veggies my favourites are potatoes, sweet potatoes, asparagus, zucchini, eggplant, garlic (it gets a nice sweet taste), any kind of onion, tomato, peppers, avocado, the row is endless. You can place them simply on the grill and add some seasoning, but for potatoes and tofu I like to make marinades, and let them sit in there for a couple of hours to soak the flavours.
Marinade nr 1. - the Smokey Bandit
Half a cup of olive oil
2 tbsp soy sauce
Lemon zest
Liquid smoke
Salt, pepper, chilli flakes
Marinade nr 2 - sweet and sour
Half a cup of olive oil
Juice of one lemon
Lemon zest
2 tsp agave
Salt, pepper
Marinade nr 3 - spice up your life
Half a cup of olive oil
Salt & pepper
Cayenne pepper
Ground cumin
Lemon zest
Garlic powder
These are just base recipes, adjust them according to the quantity you make. Mix the ingredients well, pour in a flat container and place in your veggies or tofu. Let it sit for some hours or overnight.
The secret of a good grilling is the heat, so everything can cook up quickly and nothing gets soggy.
Corn
Precook your corns for 8-10 minutes in salty water, than hop them on the grill. Meanwhile stir together vegan cream cheese or tofu broke up with fork with some soy sour cream, add salt, garlic powder, dill, chives and put it on top. sprinkle with chili flakes, nutritional yeast and more dill if you like it.

Of course I'm not thinking of berries, unless you'd like to make jam on a grill :)
You can try banana, pineapple, apples, pear, apricots, nectarine.
You can make these fruits part of a savory dish mixed with veggies or topping for a cold salad. For example you can marinade the pineapple in the spicy sauce, grill it up and add it to a fresh salad.
Other way is to serve as dessert. Grill peaches or nectarines in half, then put them on plates and serve ice cream in the middle. Put mint leaves and lemon zest on top.
Grab a few apples, take out the cores from the top, then fill the whole with walnuts and dark chocolate. Wrap them in aluminum foil and place on the grill. If you make this recipe in the oven, than no need to wrap them just put under the broil for 5-10 minutes. For an adult version pour a little rum also in them. When the chocolate is melted serve it with ice cream. Hot and cold together is always a winner.
