Dreamy ice creams

Hi Lovelies,


How is summer going on for you? It is pretty hot in Hungary, so I’m suffering a bit, but that is okay until I have watermelon and ice cream on hand. But finding a vegan ice cream can be a hard game here, as it is not so common. So what can a girl do in this situation? Yes of course, make your own healthy version for it and enjoy.

What can it be made of? First of all of course fruits. Second obvious is chocolate :) If you have these you can add water to the fruits and mix to make a slushi or ice lolly, or if you want it creamy-dreamy, than add coconut cream or coconut yoghurt. It is that simple, nothing too hard, just some magic. Today I brought you 4 variations to enjoy the summer heat. (Ingredients are per serving)

1. Strawberry-coconut:

50 gr (1,8 oz) coconut yoghurt (plain)

50 gr (1,8 oz) strawberries

10 gr (0,35 oz)desiccated coconut


Smash half of the strawberries together with the yoghurt, then add the coconut and mix well. If you like it sweet add sweetener or agave. Pour some of the mixture into the mold, then add pieces of strawberries, and layer until it is full.


2. Raspberry-mint

50 gr (1,8 oz) coconut yoghurt (plain)

50 gr (1,8 oz) raspberries

3 mint leaves


Smash half of the raspberries together with the yoghurt, then chop the mint finely and mix well. If you like it sweet add sweetener or agave. Pour some of the mixture into the mold, then add pieces of raspberries, and layer until it is full.


3. Grapefruit-blueberries

75 gr (2,7 oz) grapefruit flavored soy yoghurt

25 gr (0,9 oz) blueberries


Layer the ingredients into the mold.


4. Lemon-mint-chocolate

75 gr (2,7 oz) lemon flavored soy yoghurt

1 tbsp shaved dark chocolate

3 mint leaves


Shave or grate the dark chocolate, chop the mint finely, than mix with the yoghurt. If you want a chocolate outer layer on this one (or on any version), than melt some dark chocolate, pour a tablespoon into the mold and cover the inside of it. Freeze it for 5 minutes, then add a second coating, freeze another 5 minutes (double layer won’t break as easy when you take it out at the end). Add in the yoghurt mixture.


Put them all into the freezer for at least a couple of hours or overnight, than take out which you’d like to eat, leave it to soften a bit for 15 minutes, or dip the molds in hot water for 30 seconds and gently take it out. Voila, it was that simple, but yet a great fun and treat for you, your family or your guests at a party.
