Recently I had some stomach problems, so I thought: okay let’s just try potato diet for some days. I have to admit, that I’m in love with potatoes, so it hasn’t been a big sacrifice for me. But of course after 2-3 days I can get bored of eating only plain boiled potato, so why not try other forms? I’ve started to think about how could I use it in more ways, there are so many forms you can make this wonderful, and mostly underestimated veggie.
So I collected some of the methods you can make potatoes interesting and delicious for everyone:
- boiled potatoes with herbs, parsley and a little olive oil
- fries
- oven baked potatoes: no oil needed only spices
- mashed potatoes with a little almond milk, olive oil, sautéed onion and garlic
- potatoes boiled in whole, than smashed, add a little olive oil and crisp them up in the oven
- Duchess potatoes: you put the mashed potatoes in a piping bag, than make swirls on a baking sheet and bake them in the oven until starts to be golden brown at the edges.

Breakfast potato latkes
280 g potatoes
60 g carrots
30 g onion
salt
garlic powder
olive oil
Grate the potatoes and the carrots on the bigger side of a grater, add the chopped onion and add salt to it. Let it sit for 5 minutes, than pour off the water that comes out of the veggies. Add the garlic powder too. Heat up a tablespoon of olive oil or coconut oil in a pan and form latkes of the mixture. Let them cook on medium-low heat until one side starts to crisp up, than turn. It takes some time, but worth to wait for it.
Potato soup with veggies
200 g potatoes
100 g broccoli
60 g carrots
80 g green peas
30 g onion
garlic
veggie stock
Sauté the onion and garlic for 2-3 minutes in a pan, than add veggie stock to it with water. Add the carrots and potatoes to the soup and let them cook for about 8 minutes. Thank add the broccoli and the peas and cook for another 2 minutes. Do not cook them longer, the broccoli only needs a short time, or it won’t be as fresh and tasty. You can add parsley to garnish. This soup can be eaten immediately, or freezes well for month. Of course you can add any vegetables in it as you wish.
Potatoes loaded with avocado
300 g potatoes
half of an avocado
spring onion
garlic powder
salt
lemon juice
nutritional yeast
cayenne pepper
baby spinach
Cook the potatoes in whole, than peel them (or you can leave on the skin if you like it). Cut the top of them in a V shape. Chop up the onion and mash together with the avocado. Add the salt, garlic powder, lemon juice, nutritional yeast and the cayenne, than mash it well together. Load the potatoes with the mixture. If you have vegan cheese on hand you can put some on top and melt it in the oven. Place a good handful of baby spinach on a plate, add olive oil and lemon juice on it, than place the potatoes on top.
Boiled-grilled potatoes with grill veggies
200 g potatoes
100 g broccoli
100 g asparagus
olive oil
garlic powder
lemon juice
Italian seasoning
cumin
Cut the potatoes and boil them. Meanwhile chop up the broccoli into bite size pieces. When the potato is ready, add some olive oil in a pan, add the potatoes, broccoli and asparagus and grill them until starts to brown a little. Add the herbs to the pan. When it is ready, plate it and pour some lemon juice over the asparagus, it adds a nice kick and freshness to the flavour.
