4 delicious pasta recipes

It was long ago since I’ve posted a recipe, so I thought today let’s go for it.

Do you like pasta? I love it so much, but only try to eat it with moderation, filled up with a lots of veggies. So now I brought you four easy, fun, filling and delicious pasta recipes, if you need a 5-10 minute meal.


1. Pasta with avocado sauce

Ingredients per person:

1 cup pasta cooked

½ avocado

1 spring onion

¼ cup corn

roasted red peppers

green and black olives

garlic powder

lemon juice

nutritional yeast

Cook the pasta according to the package instructions. Save some of the cooking liquid. Chop the spring onions, the peppers and the olives. Add the white part of the onion to the half, mashed avocado along with the garlic powder, a teaspoon of nutritional yeast and a little lemon juice. Stir all the ingredients together and sprinkle on the green part of the onion. If the pasta seems to be too dry, than add a little bit of the cooking liquid to thin out the sauce.


2. Pasta with asparagus

Ingredients per person:

1 cup pasta cooked

green asparagus

¼ cup corn

cherry tomatoes

1 tbsp olive oil

1 tsp lemon juice

1 tsp garlic powder

3 tbsp nutritional yeast

Cook the pasta according to the package instructions. Save some of the cooking liquid. Chop the asparagus and the tomatoes into pieces. Add them to a pan, and grill over high heat for 2-3 minutes, or until it starts to have brown bits. Stir together the olive oil, lemon juice, garlic powder, nutritional yeast. If it is too thick, add some of the cooking liquid to thin out. Stir it with the pasta, to coat it. Add the rest of the ingredients and serve.



3. Pasta with spinach and green peas

Ingredients per person

1 cup cooked ravioli filled with spinach

½ cup green peas

1 cup baby spinach

¼ cup red onions

1 tbsp olive oil

1 tsp lemon juice

1 tsp garlic powder

3 tbsp nutritional yeast

¼ block of smoked tofu

Cook the pasta according to the package instructions. Save some of the cooking liquid. Cook the peas together with the pasta for 3 minutes. Chop the red onions. Blend together the olive oil, lemon juice, garlic powder, nutritional yeast and the tofu. If it is too thick, add some of the cooking liquid to thin out. Add all ingredients to the pasta, the baby spinach will wilt a little bit. Pour the sauce on top.


4. Sweet potato - cauliflower pasta

Ingredients per person:

1 cup cooked pasta

1 large sweet potato

1 cup cauliflower florets

¼ onion

garlic powder

nutritional yeast

liquid smoke

parsley

Cook the pasta according to the package instructions. Save some of the cooking liquid. Cook the chopped up sweet potato and cauliflower at the same time in a separate pot. Blend together the potato, half of the cauliflower, onion, garlic powder, nutritional yeast liquid smoke and parsley. If it is too thick, add some of the cooking liquid to thin out. Pour the sauce on top of the pasta, stir and garnish with more parsley.
