St. Patrick's Day green food challenge

Hi green friends,

Tomorrow is St. Patrick’s Day, which is originated from Ireland, but became so popular around the world, that 17th March is a green day now J You know me, I like green, especially in food, so why not make it a green-food day challenge?

Here are some recipes for all meals, you have options for breakfast, lunch and dinner too. Hope you will enjoy and try some of them.


Breakfast

Having a hard time eating a big meal the first thing in the morning? I have a solution for you right here.


St. Patrick’s smoothie with chia pudding

Ingredients:

½ banana

1 green apple

1 kiwi

1 large handful of spinach

2 tsp wheatgrass powder

Small piece of ginger

Juice of one lemon

2 tbsp vegan protein powder (vanilla or plain)

2 tsp hemp seeds


For the chia pudding

2 tbsp chia seeds

½ cup almond or coconut milk

And here is a secret: if you don’t want to wait overnight to have chia pudding, warm up your milk a little bit, and you’ll have the pudding consistency in 30 seconds!!!! Not kidding, just try it.



Lunch

Zucchini – chickpea soup

Ingredients:

1 onion

2 cloves garlic

1 can chickpea

1 small zucchini

Vegetable broth

Parsley

Olive oil

Nutritional yeast

Dice the onion and the garlic, and sauté them in a pan with some olive oil. When they became fragrant add the zucchini and the strained chickpeas (save some for garnish), and add as much broth as it covers them. Let it simmer for 5 minutes, than blend it up with some nutritional yeast to get a more cheesy flavour. Taste it and adjust if any spices needed. Garnish it with some parsley, chilli oil and the left out chickpeas.


Dinner

Avo toasts

Ingredients:

Puffed rice cakes

Avocado

Lemon

Olive oil

Sprouts

Vegan butter


The big question: do you like it sliced or smashed?



For other options: green wraps, or salad tacos.


For a warm dinner, what else could be better than a big bowl of pasta? But to keep it on the healthy side, let’s make zoodles!


Ingredients:

 

1 large zucchini spiralizedGreen and black olives

Onion, garlic powder

Salt and pepper

Vegan sour cream, or yoghurt, or tahini dressing

Olive oil


Add a little oil into the pan and add the spiralized zucchini. Sauté only for a minute, so it remains fresh. Add the olives, the dressing, salt and pepper, and stir well.
