Sweet potato-rice balls

Hi Foodies,


Today I have for you a really delicious, easy and fast recipe. If you have leftover rice in the fridge, it is even quicker.


So here is what we will need (for approx 20 smaller balls):

3/4 cup rice

1 cup peeled sliced sweet potato (leave it in thin, but relatively big slices)

3 cups of vegetable broth

1 large onion

½ tsp cayenne pepper

½ tsp turmeric

garlic powder

3 tbsp nutritional yeast

olive oil

Clean the onion, but don’t chop it.

Pour 1 tbsp oil in a pan and fry the rice on it until it gets a little whiter. Keep stirring continuously or it will burn down. Add the whole onion and pour over the vegetable broth.

Place the sweet potato slice on the top. Put a lid on the pan and let it cook for approx. 15 minutes.

Until this time the liquid shall be absorbed, the rice cooked and the sweet potato is soft.

Pick out the potato slices into a bowl, and mash with a fork. Take out the onion and slice it into smaller pieces. Add it to the potato. Also add the rice, cayenne pepper, nutritional yeast, garlic and turmeric. Mix it all together.

With your hands form small balls, and place them in a baking dish (greased with olive oil, or on a parchment paper). Bake them in the oven for 20 minutes, flip them after 10 minutes, not to burn on the bottom.

If you don’t want to turn on the oven, than you can pan-fry or deep-fry them. They will get crispy on the outside and soft in the inside.

While they are baking make a salad and serve the balls on top of it.
