Hi Lovelies,
2016 has come to an end. There have been ups and downs, but it was a good year for me when I look back. A lot of big changes have started in my life which will hopefully come to relization in 2017.
For tonight we will throw a small party with friends, so lets prepare some snacks for this evening. I wanted to make vegan food which leave carnivores also feel satisfied, and noone stays hungry :)
Lets jump in, shall we?
1. Pig in a blanket
For this traditional food, you will need
- vegan sausages, butternut squash, or carrots
- puff pastry
- red onions, and anything you would like to fill the piggies with
- vegan butter / plant based milk
- nutritional yeast
- seeds
- mustard, ketchup, hot sauce, etc...
If you have prepared puff pastry, than just roll it out. Cut the sausages, squash into bitesize pieces. Cut pastry into squares. Put a sausage, squash or carrot in the middle of a square, you can add red onion, or garlic pieces, baby spinach, whatever you feel, and just roll them up. If you are making different types of piggies, you can easily know what's inside if you top them with different seeds like sesame seed, black sesame seeds, half of an olive, vegan cheese, pumpkin or sunflower seeds, or just leave some plain.
Melt vegan butter and stir it with 1/4 cup of nutritional yeast to get a paste. Add some salt to the mixture. If you don't have butter on hand, than just add a tiny splash of plant based milk to it. Brush it on top of the piggies, and put on the toppings you chose. Place the piggies on a baking tray with baking sheet and put them in the oven for as long as per instructions on package.
When they are golden brown, take them out and serve with mustard, ketchup, hot sauce, whatever you like.
2. Lentil salad, to make you rich for the New Year :)
There is a tradition in our country that you have to eat lentils at midnight and on 1st January to make you rich for the next year. Lentils simbolize the gold coins, so eat a plenty of it, if you want to get rich in 2017 :)
- 2 cups of lentils (or one can precooked)
- potatoes
- red onion
- spring onions
- tomatoes
- any kind of leafy greens
- vinagrette or vegan "mayo"
Place some salad leafes in your bowl around to make a bed for your salad. Cook the potatoes and cut them into cubes, let them cool completely. Chop the onions, tomatoes, greens, cook the lentils, or if you bought canned than pour the liquid off it.
Mix everything in a bowl, add in baby spinach, or vegan sausage. Pour the salad into your prepared bowl.
For dressing mix some olive oil with lemon juice, salt, pepper, mustard. Pour it into a small dish to serve next to the salad.
For the vegan mayo you can buy it in stores or make your own: in a blender mix 1/2 cube tofu with some lemon juice, 1/4 cup nutritional yeast, salt, garlic powder and rice milk. Blend until smooth.
3. Simple spicy peanuts
This takes literally a minute and all the guests will love it. Pour the roasted peanuts into a bowl, andd some cayenne pepper, cumin powder, garlic powder and nutritional yeast. Mix well so the spices can cover the peanuts and voila! there you have it, the most simple yet flavoureful crunchy snack for the party.
4. No bake energy balls
If you need some sweets, and some energy to party all night, than make these no-bake balls, it is fast, it is delicious and keeps you up to dance into the new year :)
They are made of
1,5 cup pitted soaked dates 1,5 cup rolled oats 3 tablespoons coconutflour 2 tbs chiaseeds 30 gr darkchocolate 2 teaspoon instant coffee 2 teaspoon coconut oil cinnamon 2 scoops vegan proteinpowder in chai flavour Just put it in a food processor, pulse until it forms a dough, with wet hands roll them in balls. You can coat them in cacao powder, shredded coconut or chia seeds. Put them in the fridge for overnight or for 2 hours and enjoy.
