Spring inspired green tortilla wrap

Hello lovelies,


It is time for another green dish today.

This meal will be simple, quick, healthy, but a bit cheat meal, good fresh made and also can made in meal prep for the next day. You can take it with you on a tour, if you don't want to make a sandwich. Even kids like, it can be fun to make together, little hands can be a big help in the kitchen. You can serve tortilla wraps if you have a dinner party, or movie evening with your friends. Add it ready made to the table, or just put the ingredients in separate bowls out, so everyone can fill their own as they wish.

Ingredients:

tortilla wraps (I used a garlic-herb flavoured type)

iceberg lettuce

tomatoes

spring onion (you can add red onions too)

olives

red bell peppers

yellow bell peppers

radish

spinach

zucchini (courgette)

asparagus

garlic

sesame seeds

dressing on top: hummus, wasabi paste, rice milk

dressing nr2: tomato sauce, hot sauce or chilli flakes

dressing nr3: nutritional yeast, lemon juice, olive oil, little water

Sauteé the asparagus, zucchini, tomatoes, garlic, spinach on high heat for 2-3 minutes. Chop other ingredients into bite size pieces. Stir together the ingredients for the dressing(s). you can use the tortillas as it is packed, or just heat them up in a skillet or oven a little bit, if you like it crunchy and warm.

Pack anything in the middle of the tortilla, turn the bottom part on the filling, than roll it up. You can close both ends of the tortilla, and than slice it in half. Pour some of the dressing on top, add sesame seeds.
