Spring inspired veggie-quinoa bowl

After this month spring green pasta, green smoothie and green ice cream, I thought I would go on with the green series. So now I brought another green dish, a veggie-quinoa bowl with thai flavours. It can be ready in 20-25 minutes, full of healthy vegetables, fiber and vitamins. Most of the ingredients are in season, so they are fresh and has a great taste. Always try to use in season vegetables and fruits, mother nature is clever enough to supply us what is best for our bodies.


Ingredients (per serving):

1/2 cup quinoa

1 1/2 cup cold water

1/4 cube vegetable stock

1 cup broccoli

1/2 cup green peas

1 spring onion

1/2 cup zucchini (courgette)

2-3 pcs asparagus

handful of spinach

1/2 cup coconut milk

salt, turmeric


Prepare

Rinse quinoa under cold water, than add to a bowl with the water and the veggie stock. Put a lid on it and bring it to a boil. After that, cook it for 15 minutes with the lid on. When it is cooked, let it rest for 5 more minutes, and fluff it up with a fork.

Meanwhile, cut the vegetables into bite sizes pieces. In a pan add 1 teaspoon of olive oil, the white part of the spring onion, asparagus and broccoli. Let them cook for 2-3 minutes, than add the coconut milk, turmeric and a pinch of salt. Add the green peas, and after 2 more minutes the zucchini too. Turn off the heat. At the end stir in the spinach too.

Put the quinoa onto the plate, than add the veggie mix on top. Enjoy!
