Elderflower season

Summer is coming and elderflower season is here. So let's go out in the wild, feel the power of Mother Nature, and use what she gives to us.

Do you like elderflower? I love it so much, the smell, the taste and the beauty of it. This little miracle can heal your body and soul in so many ways. Today I brought you some recipes using this plant in various modes. Hope you'll try and enjoy them.

Important: always try to pick flowers from a place which is in nature, to avoid dirt and smog. Before using them wash under running water to get rid of the dust and insects.


Elderflower lemonade

10-12 flowers

2 lemons

1 orange

piece of ginger

2-3 mint

2,5 liter of water

Put all the ingredients in a large pot and pour water on it. Heat it up almost to a boil, than turn off the heat and let it sit until it cools completely. If you don't want to use heat, than let it sit for 6-8 hours. Than strain it, add 2 more liters of water, pour into glass bottles. If you want to make it sweeter use agave.

Tea

Use the lemonade recipe. You can drink as regular tea hot or as ice tea too. Give a little more flavour to it with a stick of cinnamon.


Slushi

Freeze the lemonade in ice-cube trays. When it is completely frozen crush them or blend in a blender. Put the crushed ice in a glass and add a little more lemonade on it. Serve with lemon wedge and mint leaves.

Gummy bears

Add pectin to the lemonade and pour it into fun molds. Use silicon molds, it will be easy to pop them out. If you want to store it or give as a gift you can put a little powdered sugar on it to prevent from sticking.


Cocktail

Crush the frozen lemonade cubes. For an elderflower mojito add 2 cl white rum and mint leaves, than pour sparkling water on it. For a great margarita add 2 cl tequila.

Ice cream

Put 2 cans of coconut milk (the thick ones) into the fridge upside down for overnight. Than open it and scoop out the cream part. Heat it up and add 4 flowers and the juice of half lemon. Let it sit for at least four hours. If it is cooled down put it in the freezer. Let it freeze overnight and enjoy.
